Vegan Pad Thai-ish

I’m not sure how much this is really like Pad Thai… but in my mind, this is what it looks and tastes like. It’s been awhile since I’ve grabbed thai take-out and if I think back, the dish is a lot sweeter than this version. Nothing against real Pad Thai, it is delicious, but this version is definitely more nutritious while still being super flavorful.

Humble Nut Butter Sundried Basil Cashew Pad Sauce by, Hungry For Results

Pad Sauce:

  • 1 Lime, juiced

  • 1 tbsp Aminos

  • 1/4 c Water

  • 4 tbsp Humble Nut Butter - Sundried Basil Cashew

  • 1/2 Avocado

  • 1 tbsp Sesame Oil

Blend it all together. Add more aminos for a saltier flavor. Add more water for a thinner consistency.

Meal: (serves two)

  • 4 Carrots, spiralized

  • 2 Zucchini, spiralized

  • 1/2 tbsp Sesame Oil

  • Pad Sauce (above) to taste

  • Handful of nuts, sesame seeds, or furikake to top *I used Isadore Nut Co. Cayenne Kick blend

In a sauté pan, heat the veggies and oil until lightly softened and slightly seared. Stir in as much sauce as you desire. Add desired toppings and serve!

This would be amazing with cubed tofu, salmon or chickpeas!
