Turmeric Maple Pecan Chickpea Blondies

TBH, I LOVE TREATS THAT AREN’T TOTALLY INDULGENT. I FEEL BETTER ABOUT SNACKING ON TASTY TREATS IF THEY STILL HAVE A BIT OF NUTRIENTS AND AREN’T LOADED IN FATS OR SUGARS. THESE DOUGHY BARS ARE MADE MOSTLY FROM CHICKPEAS, PROVIDING EACH BITE WITH COMPLEX CARBOHYDRATE, FIBER AND PROTEIN. I ALSO DON’T LOVE TO BAKE. I HATE MEASURING AND WEIGHING… WHO HAS TIME OR PATIENCE FOR THAT!? THESE BARS ARE SIMPLE, DUMP YOUR INGREDIENTS IN A FOOD PROCESSOR AND THEN A PAN AND THEN YOUR MOUTH.

Ingredients:

  • 1/2 c. Turmeric Maple Pecan Butter

  • 1 can (15oz) Chickpeas, rinsed very well & drained

  • 1/3 c. Maple Syrup

  • 1/2 tsp Vanilla Extract

  • 2 tbsp Maca Powder

  • Pinch Salt

  • 1/2 c. Chocolate Chips

How To:

Place all ingredients except the chocolate chips into a food processor. Process until a dough forms. Add 1/4c chocolate chips and pulse a few times. Stir in the remaining chips. Press the dough into a parchment lined loaf pan. Bake at 250 for 25 minutes. Turn the oven off and let the blondies sit in the oven until completely cool (hours….). I know its hard to resist, but letting these cool is a MUST.
