Ingredients:
1 c. Pitted Dates
1/2 c. Warm Water
1 tsp Vanilla Extract
2/3 c. Coconut Flour
1/4 c. Protein Powder (I used Klean Athlete Whey Isolate)
1/4 c. Chocolate Chips
Toasted Oats* Optional for rolling (could use flax/ coconut/ maca…)
Pinch Salt
In a food processor, combine the dates, water and nut butter. Pulse/blend until a thin paste forms. Add in the vanilla, protein, coconut flour and salt. Pulse until a thick ‘dough’ forms. Add in 1/2 the chocolate chips and pulse to break the chips up slightly. Stir in the remaining chips and use your hands to form into balls. Roll into your coating of choice. If you’re going to eat them within a few days, store in the fridge. If you want to save some for later, put in a freezer safe container and freeze for whenever!!
